Today, I made handmade shio ramen from scratch to show shio ramen-making process. This is also my little shio ramen experiment, experimenting with different styles of pork belly chashu and clam shio tare. I wanted this bowl to be lighter compared to creamy broth but still packed with umami and it certainly was! As mentioned in the video, I tried to change up by using different angles and lights.
